Jasper Newton Daniel, more commonly known as Jack, introduces the world to Old No. 7, his signature charcoal-mellowed Tennessee Whiskey.

Jack leaves home and is taken in by Reverend Dan Call. At the Call family farm, he learns the art of whiskey making from the preacher and an enslaved man named Nathan “Nearest” Green. Jack would later hire Nearest as the Jack Daniel Distillery’s head distiller, what we call the Master Distiller today.
The Jack Daniel Distillery is officially established, making it the very first registered distillery within the US, with Jack as the Master Distiller. The opening of his now-famous distillery would follow shortly thereafter, right next to Jack Daniel’s prime resource: the mineral-rich Cave Spring Hollow.

About Smokin ‘ Tails Distillery

Smokin' Tails Distillery is a small-batch craft distillery in Phelps, New York, founded by Master Distiller Peter Cheney (a Moonshiners: Master Distiller winner) and partners, focusing on high-quality spirits made from local grains, including moonshine (like Mooseknuckle) and whiskey, known for its tasting room, community events, and unique spirit offerings like The Undertaker's Spirits. They create spirits like Sinister Cinnamon, Apple Pie, and various whiskeys, emphasizing local ingredients and craft production, and are part of the Finger Lakes craft beverage trail.

After years of Peter making his moonshine in the hearse garage and all of us friends taking full advantage of his creations; Chris jokingly said, “We should open a distillery!”  We all proclaimed, “Pete’s moonshine is like nothing we’ve ever tasted before!” After winning Master Distiller in March 2020, Chris’s jokes soon became a reality. Six months later, during a worldwide pandemic, Smokin’ Tails Distillery was born.

We received our federal liquor license rather quickly but waited with anticipation for over six months for any word from New York State Liquor Authority. On a chilly Fall Day, we finally received a letter stating a few small things needed to be completed and we thought we were in the clear!!! However, we soon realized the final items needed were pictures of our Tasting Room and Still Room….tasks we hadn’t even started!!! Not to mention we only had 15 DAYS to get everything accomplished!! With the help of family and friends, we built our much-loved black walnut bar and created a beautiful cozy Tasting Room in just 13 days!! Something we are very proud of.

While we opened during a Worldwide pandemic, we had no idea where this business would take us. Let alone how quickly new friendships would be made with so many people, not only from New York State but nationwide. We truly thrive on making our customers feel like family, but most importantly creating high quality spirits using locally grown grains. Without a high-quality product none of this would exist. Pete, Sharon, Chris and Lisa have nothing but gratitude for our friendship, but even more for this crazy adventure we have with Smokin’ Tails Distillery!!! Shine On Everyone!

George Dickel refers to both a German-American businessman, George Augustus Dickel (1818-1894), and the popular brand of Tennessee whiskey named in his honor, known for its smooth profile and distinctive charcoal-mellowing process, following Scottish tradition by dropping the 'e' in 'whisky'. He started as a Nashville merchant and liquor wholesaler, eventually establishing the Geo. A. Dickel & Co. to distribute whisky, which later led to the creation of the Cascade Hollow Distillery, now owned by Diageo.

  • Origins: Born in Germany, he immigrated to the U.S. in 1844 and settled in Nashville, Tennessee.

1870: the beginning

Learning from our heritage

Born 40 years after the signing of the Declaration of Independence, George A. Dickel was an established Nashville merchant when he entered the whisky business. Dickel grew his reputation for selling the smoothest, most mellow spirits in the region. Thus, Geo. A. Dickel & Co. was born and when the Cascade Hollow Distillery opened in 1878 in neighboring Coffee County, George Dickel bought a large share.

Born from a belief that whisky made in the winter months produced a mellower sip, our liquids were always chilled to 40 degrees before charcoal filtering for a smooth yet complex taste.

Since the very beginning, our unique spelling of ‘whisky’ without the ‘e’ speaks to the passion from which our brand was born. A drive to rethink American whiskey and elevate the experience to rival the world’s finest scotch whiskies. To this day, we continue the tradition of bringing new perspectives to our liquid legacy.

In her role as General Manager and Distiller of Cascade Hollow Distilling Co., Nicole Austin leads the strategic direction of the company, with responsibilities across operations and marketing for the distillery and its whisky brands.

Since joining the Cascade Hollow team in 2018, she’s been instrumental in the latest innovations from George Dickel – including George Dickel Bottled in Bond Distilling Season Fall 2005, Whisky Advocate’s “Whisky of the Year” in 2019. In March 2020, Nicole was named as Artisan Spirit Magazine’s first ever “Distiller of the Year,” before earning the “Distillery Manager” award from Icons of Whisky Awards in 2021.

Nicole also launched the award-winning Dickel Bourbon, the George Dickel x Leopold Bros Collaboration Rye Blend and Cascade Moon Whisky series.

Join us on a behind-the-curtain journey through Watershed Distillery where you will learn the mystery, history, and story of the distillery.

Each tour covers our diverse family of products, easy to understand chats about distillation, and the exciting world of barrel aging. Tours last approximately one hour and involve a brief (and we mean, brief) walk between our distillery space and barrel warehouse. Each tour includes a try-before-you-buy sampling of select spirits and a visit to the Watershed Distillery Bottle shop filled with bottles (including bottle shop exclusives), glassware, and wearables.
