Born 40 years after the signing of the Declaration of Independence, George A. Dickel was an established Nashville merchant when he entered the whisky business. Dickel grew his reputation for selling the smoothest, most mellow spirits in the region. Thus, Geo. A. Dickel & Co. was born and when the Cascade Hollow Distillery opened in 1878 in neighboring Coffee County, George Dickel bought a large share.

Born from a belief that whisky made in the winter months produced a mellower sip, our liquids were always chilled to 40 degrees before charcoal filtering for a smooth yet complex taste.

Since the very beginning, our unique spelling of ‘whisky’ without the ‘e’ speaks to the passion from which our brand was born. A drive to rethink American whiskey and elevate the experience to rival the world’s finest scotch whiskies. To this day, we continue the tradition of bringing new perspectives to our liquid legacy.

In her role as General Manager and Distiller of Cascade Hollow Distilling Co., Nicole Austin leads the strategic direction of the company, with responsibilities across operations and marketing for the distillery and its whisky brands.

Since joining the Cascade Hollow team in 2018, she’s been instrumental in the latest innovations from George Dickel – including George Dickel Bottled in Bond Distilling Season Fall 2005, Whisky Advocate’s “Whisky of the Year” in 2019. In March 2020, Nicole was named as Artisan Spirit Magazine’s first ever “Distiller of the Year,” before earning the “Distillery Manager” award from Icons of Whisky Awards in 2021.

The Historically-Inspired George Dickel x Leopold Bros Collaboration Blend Returns to Shelves this November

TULLAHOMA, Tenn., Nov. 1, 2022  Last year, the collaboration between George Dickel and Leopold Bros brought whisky fans a one-of-a-kind, historically inspired blend as they sought to challenge the status quo on rye offerings in the market. This November, following the success of the inaugural release, the two distilleries are excited to announce the return of the George Dickel x Leopold Bros Collaboration Blend. By returning to the same liquid as the initial release, the brands are continuing their commitment to produce quality, authentic whisky.

 

This award-winning whisky blends Leopold Bros' celebrated Three Chamber Rye with George Dickel's column still rye produced at Cascade Hollow Distilling Co. Recreating a historic style, the Cascade Hollow component of the blend debuted in 2021 in the inaugural release of the Collaboration Blend, marking the first time whisky fans were able to enjoy a rye whisky distilled at Cascade Hollow.

This morning, George Dickel announced the brand is adding to its highly acclaimed, award-winning Bottled in Bond Whisky Series with George Dickel Bottled in Bond Fall 2008, Aged 13 Years.

What makes this whisky so special? Well, to start off it’s the latest to join the brand’s award-winning Bottled in Bond series led by Cascade Hollow Distilling Co. General Manager and Distiller, Nicole Austin, and follows George Dickel Bottled in Bond Spring 2007, Aged 13 Years winning Double Gold at the San Francisco World Spirits Competition and receiving a score of 95 at the Ultimate Spirits Challenge this year. It’s also a Bottled in Bond Whisky, and as you may know, the Bottled in Bond Act of 1897 was enacted in order to help guarantee a spirit’s authenticity and level of quality. To be labeled as Bottled in Bond, a spirit must be aged and bottled according to a special set of regulations from the U.S. Government that includes:

  • Be stored in oak containers a federally bonded warehouse under U.S. government supervision (George Dickel Bottled in Bond was stored at Cascade Hollow Distillery in Tullahoma, TN) for at least four years (13 years old)
  • Be bottled at 100 proof (50% ABV) and reduced in proof only by the addition of water to not less than 100 proof

For Cascade Hollow Distilling Co.'s General Manager and Distiller, Nicole Austin, creating Dickel Bourbon was an opportunity to showcase the amazing, mature whiskies at the distillery. At the same time, it allowed the brand to give a home to those barrels that leaned into more traditional bourbon notes and did not express the Tennessee Whiskey tasting characteristics found in the rest of the George Dickel offerings. When she was creating the ultimate blend for Dickel Bourbon, Nicole sampled thousands of barrels in the distillery's inventory before selecting the final liquid. The result is a handcrafted, small-batch bourbon that's been blended to perfection.

"At Cascade Hollow, we have a lot of whiskies that exemplify the Tennessee Whiskey style, but we also have inventory that has a lot more in common with bourbon as we understand it in America," said Nicole Austin, General Manager and Distiller at Cascade Hollow Distilling Co. "Dickel Bourbon is an opportunity for us to finally share this quality liquid with the rest of the world. I'm particularly proud that we have the kind of mature whisky inventory that can deliver an 8-year-old bourbon. Dickel Bourbon boasts sweet initial notes of vanilla leading into bright hints of cherry and orange before being balanced by almond toffee and oak. While the liquid is approachable and balanced, it does also have some complexity due to it being aged 8 years. At 90 proof, bourbon fans can best enjoy Dickel Bourbon neat or on the rocks, in addition to mixing it into some of their favorite cocktails like an Old Fashioned.

While many of the brand's Tennessee Whiskeys also meet the criteria to be called bourbons, George Dickel will continue to label its other permanent offerings as Tennessee Whiskey since the liquid's bold tasting characteristics are more closely related to that style. On the other hand, Nicole and the team chose to label Dickel Bourbon as a bourbon due to the final liquid offering a perfectly balanced combination of vanilla, oak, fruit and spice – the tasting profile most closely associated with traditional bourbon – without any one of them rising above the other.

Dickel Bourbon Old Fashioned Recipe

  • 1.5 oz Dickel Bourbon
  • 1 tsp. sugar
  • 0.25 oz. bitters
  • 1 splash water

Muddle sugar with bitters and water and add Recipe No. 12. Shake with ice and pour into an old fashioned glass. Garnish with orange slice.

Close to a year later, General Manager and Distiller, Nicole Austin, is continuing her pledge of transparency, authenticity and producing a quality whisky at an approachable price by releasing a new bottling of George Dickel's Bottled in Bond Tennessee Whisky.


George Dickel Announces the Release of Bottled in Bond (Fall 2008)

Bold and balanced, this 11-year-old whisky was bottled in Fall 2008 and offers tantalizing notes of pecan, maple syrup and dried apple. At 100 proof (50% ABV), this release of George Dickel Bottled in Bond is best enjoyed slowly neat or on the rocks and plays well in many classic cocktails like an Old Fashioned or Perfect Manhattan.

"Bottled in Bond whiskies have always been one of my favorite categories because you know exactly what you're getting when you pick up a bottle," said Austin. "Our team continues to make great whisky that's reflective of the values we feel are most important, and I'm proud to share this year's vintage of George Dickel Bottled in Bond with everyone. Like last year's release, this bottling is a bold, complex spirit that shares the classic nutty, fruity and waxy characteristics that are expected from mature George Dickel whiskies."

George Dickel Bottled in Bond has a mash bill of 84% corn, 8% rye and 8% malted barley. It is chill charcoal mellowed like the rest of the George Dickel Tennessee Whisky portfolio, which helps it get that smooth and creamy mouthfeel for which the brand is best known.

Beginning this month, the new George Dickel Bottled in Bond will be available in select markets across the nation for consumers to purchase at retail or order directly to their homes for a suggested retail price of $39.99.

Personal Preference Manhattan Recipe

  • 1.5 oz George Dickel Bottled in Bond
  • .25 oz Sweet Vermouth
  • .25 oz Dry Vermouth
  • Dash aromatic bitters
  • Lemon peel garnish

Fill cocktail shaker with ice and combine whiskey, vermouths, and bitters. Mix well then strain into cocktail glass. Add lemon peel as garnish and serve.

This recognition follows the whisky's May release and General Manager and Distiller Nicole Austin's first innovation since joining the Cascade Hollow Distilling Company in 2018.

George Dickel Bottled in Bond Tennessee Whisky is a limited release, 13-year-old whisky that has already racked up a score of 95 (on a scale of 100) and earned the designation of "Best Buy" from Wine Enthusiast Magazine. To be labeled as Bottled in Bond, a spirit must be: composed only of the same class and type of spirits, the product of one distillation season by one distillery (distilled by Cascade Hollow Distilling Co. at Cascade Hollow Distillery, DSP-TN-2, during the fall season of 2005), unaltered from the original condition or character, stored in oak containers a federally bonded warehouse under U.S. government supervision  (stored at Cascade Hollow Distillery in Tullahoma, TN) for at least four years (13 years old) and bottled at 100 proof (50% ABV) and reduced in proof only by the addition of water to not less than 100 proof. George Dickel Bottled in Bond has been aged and bottled according to this special set of regulations from the U.S. government's Standards of Identity for Distilled Spirits.
