While most distilleries buy their malts, we don’t. We’re intentional about overseeing the whole process, from grain to glass. We take pride in being self-sufficient and masters of the whole craft, not just a portion of it.
We take the hard way and it pays off. We never chill filter, which means, we don’t filter out the “haze” or “cloudiness” because that’s the good stuff. We embrace it and lean into those qualities. We want the fruit, the heavy notes, and the wood characteristics that chill filtration will remove.
We always sweet mash, yielding a cleaner and more complex flavor from the fermentation, from the our grains, and from the still. This process creates a more balanced profile that gets carried into the bottle and, eventually, the drinker’s glass.
