    95% of our grain comes from within 20 miles. Our primary grower, Hazard Free Farms, supplies the foundation. Then Tim’s unconventional “cold distillation” process creates flavors you simply can’t find anywhere else in America.

    History:
    The Jim Beam brand originated in Kentucky in 1795 with Jacob Beam. It was named after James Beauregard “Jim” Beam, who helped modernize the family’s whiskey-making techniques and rebuilt the business after Prohibition. The James B. Beam Distilling Company was officially formed in 1943, and the brand name was changed to Jim Beam.

    Production:
    Jim Beam is a type of Kentucky straight bourbon, which means it is made in Kentucky and must meet specific legal requirements. The mash bill includes corn, rye, and barley malt, and the fermentation uses a yeast strain kept alive since Prohibition. It is distilled twice and aged for a minimum of four years in new, charred American white oak barrels.

    Flavor profile:
    The original Jim Beam bourbon has a light-bodied, spicy, and sweet flavor, with notes of caramel, vanilla, and oak. Premium varieties, like Jim Beam Black, are aged longer for a fuller, smoother taste.

    About The Whistler Irish Whiskey:

    From milling to mashing, distilling, maturing and bottling, every elegant mouthful of Boann Single Malt and Pot Still whiskey is created within the quietude of our unique family distillery.

    The Process
    Distilling is an art. At Boann we combine traditional brewing and distilling methods with modern technology to create the most unique of whiskeys.

    The production of the highest quality Single Pot Still distillate requires a considered effort to not only efficiently process the un-malted grains contained within the Single Pot Still mash bills (recipes), but to also maximise the flavour and mouthfeel of Ireland’s signature style of whiskey.

    It is the inclusion of these unmalted grains in the mashbill that not only garnered Irish Single Pot Still whiskey its global fame, but it’s also what separates the category from its cousin, Single Malt (100% malted barley).

    The Boann Distillery brewing system is specifically designed to produce single pot still spirit by utilising both a mash conversion vessel and lauter tun. This makes it one of the only purpose-built single pot still brewing systems in the country specifically designed to process un-malted grains, and efficiently activate crucial enzymes that make brewing with un-malted grains possible. This makes us uniquely positioned to produce some of the finest and highest quality single pot still spirit in the country.

    Every raw ingredient sourced is 100% natural and 100% local. Every drop of water is drawn from our Boyne Valley well. Every grain of barley is provided by our native farmers.

    We operate a closed loop system for water, recycling all our input water and maximising energy recovery from our systems. The heat generated helps run our packaging lines and will heat the restaurant, visitor centre and offices. Rain water harvesting will be utilised to minimise our footprint and also water our gin botanicals.

    All bi-products of distillation, pot ale and spent grains are very high in protein and used as animal feed.

    From milling to mashing, maturing to bottling, every elegant mouthful of Boann malted pot still whiskey and craft gin is created within the quietude of our family distillery.

    HEAD DISTILLER

    At 29 years of age, Michael our Head Distiller is Ireland’s youngest head distiller. Having completed an undergraduate degree in Chemical Engineering, Michael then went on to complete his General Certificate in Distilling, in association with Hariot Watt University. Michael quickly ascended through the ranks and in 2014 received his first appointment to Head Distiller.

    He brings a wealth of knowledge to our project and will be key in developing the unique proposition that will be our whiskeys. Our shared passion and his wealth of knowledge means each detail at Boann Distillery has been meticulously considered.

    WORKING WITH THE GRAIN

    The spirits world is adorned with so many flavored casks, barrels and butts. We pride ourselves on choosing only the finest staves to flavor our whiskeys. Knowing what to use for maturation and when to bottle is key to The Whistler whiskeys hitting the right notes.

    THE KEEPERS
    In the heart of the Boyne Valley, the Cooney family is reviving the time-honoured traditions of Ireland’s master distillers. It is here, in Boann Distillery, that we have set about creating the finest whiskeys.

    Boann Distillery is a family company, born and believed in by Patrick and Marie Cooney, along with their family; Sally-Anne, Celestine, Peter, Patrick and James.

    Our Founding

    Jasper Newton Daniel, more commonly known as Jack, introduces the world to Old No. 7, his signature charcoal-mellowed Tennessee Whiskey.

    Jack leaves home and is taken in by Reverend Dan Call. At the Call family farm, he learns the art of whiskey making from the preacher and an enslaved man named Nathan “Nearest” Green. Jack would later hire Nearest as the Jack Daniel Distillery’s head distiller, what we call the Master Distiller today.

    The Jack Daniel Distillery is officially established, making it the very first registered distillery within the US, with Jack as the Master Distiller. The opening of his now-famous distillery would follow shortly thereafter, right next to Jack Daniel’s prime resource: the mineral-rich Cave Spring Hollow.

    We’ve been bottling Tennessee spring water since 1866. With some notable modifications, of course.

    Our founder is a Navy veteran, having served as an Arabic linguist and intelligence analyst while stationed overseas and in Maryland. He served on a number of surface and subsurface ships while stationed in Greece for five years, and participated in Operations Desert Storm/Desert Shield. He served as a senior intelligence analyst on his return to the United States.

    Born 40 years after the signing of the Declaration of Independence, George A. Dickel was an established Nashville merchant when he entered the whisky business.     Born from a belief that whisky made in the winter months produced a mellower sip, our liquids were always chilled to 40 degrees before charcoal filtering for a smooth yet complex taste.

        For almost two centuries, the name Mattingly has been synonymous with world-class bourbon and innovation. John Graves Mattingly (1823-1910) was responsible for perfecting the now famous column still used by the greatest bourbon producers in the world to provide a more continuous process to satisfy the growing demand of his customers. Now, Jeff Mattingly, a sixth generation descendent of John Graves Mattingly, has created and perfected the first of its kind custom bourbon blending process at his new distillery in Frankfort, KY that allows guests to not only blend their personal bottle from multiple "Double Staved" proprietary barrels selected by the Mattingly team of master blenders, but also choose their bottle, label, closure (including various wax colors or a wood cork) and their own personal name for their creation.

        Seagram's V.O.

        Canadian Whisky

        There is a mystery surrounding the origins and naming of Seagram's V.O., one of the most well-known whiskies produced at Joseph E. Seagram's former Waterloo Distillery. Family tradition states that "V.O." stands for "Very Own," as this was a whisky blend created for Joseph E. Seagram's own family. Others claim that the initials stand for "Very Old" in keeping with the distillers assertion that is was a blend of very old Canadian Whiskies.

        The story tells how Joseph's son, Thomas, had the distillery's blender, William Hortop, prepare a whisky blend for his personal use to celebrate his upcoming marriage in 1913 to Dorothy Pearson. Upon tasting the special blend, Joseph insisted that the family blend be put on the market. It went on to become one of Seagram's biggest sellers.
