Our Story

Both born in the Phoenix Area, Eric and Austin made the choice in their venture into adulthood by setting up their lives in a new climate. They took their desert instilled water-preservation mindset and applied it to building out their distillery to reduce water usage when creating quality consumables. Ultimately opening the doors to Ballmer Peak Distillery in late 2019, serving up high-end cocktails at accessible pricing made entirely from spirits made onsite. It wasn’t the most ideal time to launch a new business, but they say hindsight is 2020.

During the pandemic Ballmer Peak Distillery was one of the first to switch operations to hand sanitizer, and prioritized the conversion of unwanted alcohol into sanitizer, which they provided to individuals within the community at no cost. It was a strange time to say the least, but worked as a testbed to craft new products into their core lineup. In 2020, Vodka crafted from molasses joined their Australian-inspired Gin, Silver Rum, Golden Rum, Spiced Rum and unaged Light Whiskey.

In the years which followed Ballmer Peak continued to innovate and iterate, releasing small batches of experimental, limited release products in an effort to foster creativity and ultimately flesh out their barrel program. This led to a collaboration with Locke & Co distilling, utilizing their rye-whiskey-soaked charred aspen discs into Ballmer Peak’s Outback Aspen Gin. The current barrel program contains a selection of rums, brandies and whiskies stored in a variety of different oak casks, expected to release once they reach maturation.

Our Name

Our name comes from the land we call home—Northern California’s Redwood Empire. Once blanketed by ancient trees stretching the length of the coast, this 420-mile forest was one of the most majestic ecosystems on earth. Today, less than 3% of that original redwood forest remains. What’s left stands protected in pockets thanks to early conservationists like John Muir. Many of these towering icons—like “Pipe Dream,” the 14th largest redwood on earth, and “Emerald Giant,” the fastest-growing tree in the world—have inspired the names of our whiskies.

 

Founder Derek Benham

In 2013, founder Derek Benham saw potential in this region’s cool, temperate climate—perfect for aging whiskey slowly and evenly. Two years later, we broke distillery ground in the small town of Graton, nestled in the Russian River Valley and surrounded by redwoods. With Master Distiller Jeff Duckhorn at the helm, we began crafting our first barrels while also traveling cross-country to source mature whiskey to complement our own distillate.

 

HONORING THE REDWOODS

For four years, we waited. Tasting, refining, blending, producing and sourcing more. When the time came to bottle, we honored the ancient forests around us and named our whiskey Redwood Empire. Every expression is tied to a protected tree and carries a quote from John Muir, the father of our national parks.

 

DRIVEN BY COMMITMENT

Driven by a commitment to bold, expressive California whiskey, we’ve built the largest inventory of aging whiskey in the state—despite being limited to producing just four barrels a day. In 2025, a decade after laying down our first barrel, we moved operations to Mare Island, north of San Francisco, where we’ve tripled capacity to 14 barrels a day. Still small by industry standards—where many distilleries produce well over 300 barrels daily—we choose to go slow, with intent. We pride ourselves in our Northern California regionality and each choice we make is deliberating made to craft a distinct whiskey that is smooth, complex and full of grain character.

 

HELPING RESTORE FORESTS

We believe in giving back, and we’re helping restore forests. We support Save the Redwoods League, a California-based nonprofit dedicated to protecting and restoring the redwood forests that define our home. And through our partnership with Trees for the Future, an international reforestation organization, we’ve planted over 1.7 million trees—with more going in the ground every year.

They also utilize five different proprietary yeast strains, each contributing unique flavor characteristics: delicate fruit, slightly spicy, rich fruit, floral essence, or herbal notes.

These combinations result in ten distinct bourbon recipes, which are then blended to create the standard Four Roses Bourbon.

The aging process takes place in single-story rackhouses in Cox’s Creek, Kentucky.

LOUISVILLE, Ky., July 16, 2025 - Today, Old Forester announces the annual release of a fan favorite: 1910 Extra Extra Old, part of 117 Series.

The double-barreled bourbon is aged for an extra 24-months in a heavily charred secondary oak barrel.

1910 Extra Extra Old debuted in Spring 2021 as a result of an experiment of aging 1910 Old Fine Whisky for an extended finishing period which impacted the expression's tasting profile.

"This bourbon exemplifies our innovative spirit at Old Forester by taking something great and making it even better. The additional maturation leveraged to produce this release unlocks incredibly robust and distinctive flavor," Assistant Master Distiller Caleb Trigo said.

Old Forester 1910 commemorates the October 22, 1910 distillery fire at 117 Main Street. A batch of mature whisky, ready to be bottled, was then re-barreled in new barrels so it could be removed due to the fire damage. For Extra Extra Old, the extra time in its secondary barrel extracts a more heavily charred influence.

Old Forester Extra Extra Old, $64.99, is bottled at 93 proof and will be available in limited quantities at the Old Forester Distillery starting July 16 as well as select Kentucky retailers. BOSTON, July 10, 2025 -- Wheel Horse Whiskey, distilled and matured at the historic Green River Distilling in Owensboro, Kentucky, has unveiled its Barrel Master Select series—the brand's first foray into barrel proof small batch whiskey. The inaugural release is a 5-year Kentucky Straight Bourbon bottled at 112.6 proof, and available in a limited run of just 2,100 bottles. SRP: $39.99.

Crafted by Barrel Master Stephen Corrigan, Batch 1 is a blend of twelve hand-selected barrels of 5–6-year-old Kentucky Straight Bourbon. Bottled without chill filtration, the whiskey retains its full character and complexity, delivering a robust and flavorful sip.

"When we launched Wheel Horse in 2019 as a 101 proof brand, we set out to craft a whiskey that was bold, approachable, and versatile," says Corrigan. "We still love the 101 proof point, but there's something undeniably exciting about uncut whiskey. With Barrel Master Select, we get to present our whiskey in its purest form, and each release will reflect the character of the barrels that make it shine."

Batch 1 offers a rich and expressive profile. On the nose, aromas of cherry, mocha, and warm spice fill the glass. The palate delivers decadent notes of toffee, vanilla, and café au lait, before unfolding into a warm, lingering finish of toasted walnut, burnt sugar, and Black Forest cake.

Beginning

We’re proud to be a New York State Farm Distillery, with most of our ingredients sourced from local farmers.

In October 2015, Southern Tier Distillery was granted our New York State “Farm Distiller’s” License. Since that day we have been working to not just make one outstanding spirit, but numerous spirits to satisfy the tastes of many. Committed to being a farm to glass distillery, almost 90% of what goes into our products comes from local farms.

With our tasting room opening in August 2015, we were able to tease our customers with samples of each of our spirits. After getting an incredible reaction we knew we needed to do more and we needed to do it quick. Playing off Southern Tier Brewery’s “The Empty Pint”, soon the distillery’s “The Empty Bottle” was created. We began serving handmade cocktails following our guidelines of “farm to glass”. Original cocktails recipes are always created with fresh ingredients, Southern Tier spirits, and old faithful, our taste buds.

With word getting out that Southern Tier had created a distillery and was now selling spirits, the orders came flowing in! We soon were distributing to local counties within a few short months of opening and our growth continues across the nation.
