HOUSTON (January 31, 2021) – James Beard Award-winning chef Chris Shepherd and 8th Wonder Brewery & Distillery have joined forces to create Hammer Down, an original bourbon dreamed up not only to be delicious, but to raise funds for nonprofit organization Southern Smoke’s ongoing support of members of the hospitality industry. Hammer Down is blended, proofed, and bottled in Houston at 8th Wonder Distillery. Bars and restaurants can order Hammer Down through Spec’s Wine, Spirits & Finer Foods, and other class B permit holders, while the general public can purchase bottles at local Total Wine retailers and other independent liquor stores.

Every drink counts: $2 from each bottle sold will go to Southern Smoke, the crisis relief organization founded to serve and support people in the food and beverage industry. 8th Wonder Brewery & Distillery is donating $1 for every bottle of Hammer Down sold, and Silver Eagle Distributors are matching that contribution with a $1 donation for each bottle purchased.

Perfected over approximately six months in 2021, Hammer Down is a smooth, blended bourbon featuring notes of caramel, sweet vanilla, honey, and toasted butterscotch, with a hint of corn flakes. Intended to be enjoyed neat or in a cocktail, Hammer Down makes an excellent Highball or Old Fashioned.

8th Wonder Co-founder, Brewmaster, and Distiller Aaron Corsi gathered dozens of barrel samples to begin the blending and proofing process of Hammer Down. The tasting committee included Corsi; Chris Shepherd, James Beard Award-winning chef and Southern Smoke Founding Director and Honorary Chairman; Westin Galleymore, Underbelly Director of Bars; Victoria Dearmond, Underbelly Pastry Director; Ryan Soroka, 8th Wonder Co-founder and President; Sean Rosenbaum, 8th Wonder Partner; and other members of Shepherd’s Underbelly Hospitality and Southern Smoke teams.

“We would sample until our palates couldn’t take any more, then schedule another sampling day,” said Aaron Corsi, 8th Wonder Brewmaster, Distiller, and Co-founder. “This all happened over the course of a couple of months and what seemed like hundreds of variations until we came up with this fantastic whiskey. I remember the first High Ball I made with what became the final blend, and I remember thinking, ‘I am probably going to end up drinking this until the end of my days.’”

“This was absolutely one of the most fun things I’ve gotten to do––discussing the type of bourbon we wanted, which was something easy to drink that would still hold up in a cocktail, and then tasting the different blending options that Aaron made for us,” said Chris Shepherd, James Beard Award-winning chef and Southern Smoke Founding Director and Honorary Chairman. “By ordering or buying Hammer Down, you’re maintaining the support system and safety net that Southern Smoke is nationwide. Between March 2020 and March 2021, the group has distributed more than $6 million to women and men working in the food and beverage industry across the country. Both Single Casks are solely available in the U.S. through importer ImpEx Beverages. The new cask strength whiskies land stateside in anticipation of St. David’s Day, the March 1st National Day of Wales. It was on this day in 2004 that Penderyn Distillery launched its first whisky in the presence of HRH Prince Charles, Prince of Wales, and ever since has used this time of year to release some of its most-anticipated products.

Penderyn Six Year Old Moscatel de Setubal Wine Cask (Cask No. W19 - 60.8% ABV) is matured in Buffalo Trace Bourbon casks and then finished in Moscatel de Setúbal casks, which formerly served to age the renowned Portuguese fortified wine. The result is a nose that is fruity with floral aromas like orange blossom, peach, apples, white grape, and gooseberry. The palette features sweet citrus flavors, orange peel, apricot, raisin, figs, and a nutty oak spice. The finish is sweet and fades to oaky dryness with a hint of cacao. Limited bottling of 268, with a recommended retail price of $120, on store shelves in CA, MA, NY/NJ, NE, IL, KS, AZ, NV, TX, DC/DE/MD, WA, TN, OR, and MN.

Penderyn Six Year Old Tawny Port Cask (Cask No. PT318 - 59.59% ABV) has been matured in Buffalo Trace Bourbon casks and then finished in Tawny Port casks. Rich, creamy notes of vanilla, caramel, plums, and black grapes on the nose give way to a palate of red berries with gentle tannin and pepper spice. The finish is warm and creamy with black fruit and a hint of dry oak. Limited bottling of 300, with a recommended retail price of $120, on store shelves in CA, MA, NY/NJ, NE, IL, KS, AZ, NV, TX, DC/DE/MD, WA, TN, OR, and MN.

SHELBYVILLE, Tenn., Jan. 25, 2022- Uncle Nearest Premium Whiskey, the most awarded American Whiskey or Bourbon of 2019 and 2020, confirmed today it has solidified this honor for the third year in a row, raking in a record 198 awards in 2021. Since its debut in 2017, the super-premium whiskey from Tennessee has topped every major spirit competition, garnering 380 total awards, including 46 Best in Class, and 213 Gold, Double Gold and Platinum medals. Last year alone, the brand won 21 Best in Class awards from the industry's most respected judges, including at the San Francisco World Spirits Competition, John Barleycorn Awards, Ascot Awards, Bartender Spirits Awards, and The Spirits Business Luxury Masters.

The distillery is continuing this momentum as it also announces today the release of its long-awaited new packaging containing whiskey 100-percent distilled, aged and bottled by Uncle Nearest, as well as unveils its 2022 slate of whiskeys which uses four different recipes. In addition to its current portfolio of core and distillery exclusive whiskeys, this year Nearest Green Distillery will release Uncle Nearest Rye, Uncle Nearest Single Barrel Rye, and a new more widely available Uncle Nearest Single Barrel Whiskey.

"Since the inception of our brand, everything in our bottles was blended to perfection by our master blender, Victoria Eady Butler, but the whiskey was sourced. Our own whiskey began fully maturing last year, and what we have in our bottles now is what we believe is the best whiskey we've ever released," said Fawn Weaver, founder and CEO. "Some call Uncle Nearest a straight bourbon whiskey, some call us straight Tennessee Whiskey. We don't care, as our whiskey meets the legal requirement of both distinctions. What we do care is that you call us super-premium whiskey as that is what our namesake made, and it is what our team and partners have been working nonstop to make each and every day."

Among the greatest change to the new packaging is the replacement of the sketch of the property where Nearest originally distilled by the insignia of Nearest Green Distillery, which boasts a dram of whiskey encased by a horseshoe, signifying its iron Tennessee roots. Victoria Eady Butler, fifth-generation Nearest Green descendant, who has been named Master Blender of the Year by Whisky Magazine, VinePair, and The Spirits Business, has also added a note and her signature to the front of every newly released bottle.

"Our first-generation Uncle Nearest bottles shared the history of my great-great-grandfather and his significance to the Tennessee Whiskey coming out of the hills and hollows around Lynchburg," said Eady Butler. Last week, the company revealed via social media their plans to turn all their original bottles into collector's items, encouraging buyers to "clear the shelves" of the "prelude" Uncle Nearest bottles and make way for the new editions.

"The packaging we used since our inception is no more as of 2022," said Katharine Jerkens, Chief Business Officer. "If you walk into any retail store from coast to coast, you will notice something familiar – empty Uncle Nearest shelves. We waited for our Whiskey Family to completely sell us out, and now we are restocking with the bottles that will permanently cement the legacy of Nearest Green, the world's first known African American master distiller."

The seven bottles in their 2022 whiskey slate will first be released at the 323-acre Nearest Green Distillery in Shelbyville, Tennessee, with 1884 Small Batch Whiskey debuting last weekend and cases beginning to ship into markets across the country today. In December 2021, the company released the first new bottles of its Master Blend Edition whiskey exclusively at the distillery, which has already been met with rave reviews from both critics and consumers.
