Nicole Austin Named General Manager and Distiller of Cascade Hollow Distilling Co. - The Home of George Dickel Tennessee Whisky

NICOLE AUSTIN NAMED GENERAL MANAGER AND DISTILLER OF CASCADE HOLLOW DISTILLING CO. – THE HOME OF GEORGE DICKEL TENNESSEE WHISKY.TULLAHOMA, , March 5, 2018 When Nicole Austin was hand selected by distilling icon Dave Pickerell to be the first employee for his spirits consulting firm in 2012, the spirits industry took note of her fresh thinking and strategic vision.  When The New York Times dubbed her "Bourbon's Master of the Craft" in 2014, the industry applauded her distilling expertise.  When the rye whiskey she helped create won Double Gold at the 2015 San Francisco Spirits Competition, they celebrated her creativity and innovation.  And, this week, when she was named General Manager and Distiller for the newly formed Cascade Hollow Distilling Co., Austin knew she'd found a home in Tennessee.

What was formerly known as the George Dickel Distillery will now be called Cascade Hollow Distilling Co. – the home of George Dickel Tennessee Whisky and future innovation spirits.  George Dickel's "Handmade the Hard Way" approach to making whisky will remain the same and Austin will be charged with overseeing the brand's 148-year legacy of making Tennessee's smoothest, award winning craft whisky.  As General Manager of Cascade Hollow Distilling Co., she will establish the vision of what this new company can be and ignite commercial and innovation strategies for the flagship George Dickel brand, future innovation spirits and the distillery.

"There are so many reasons why I know this position will be a great fit for me – from the jaw dropping beauty of Cascade Hollow to the incredible history of George Dickel," said Austin.  "But, ultimately, it is the freedom to make Cascade Hollow Distilling Co. my home that made up my mind.  As a distiller, strategist and mentor, I've worn a lot of hats in my career which have prepared me for this moment.  Now, it's time for me to draw from those experiences and build a business that creates a fundamental step change in how people think about Tennessee Whisky.  I'm proud to be here and ready to get to work."

Austin graduated from Manhattan College with a major in Chemical Engineering in 2006, before landing her position as a Master Blender for Kings County Distillery in 2010.  She then joined The Oak View Spirits consulting firm where she handled everything from raw material sourcing to contract negotiations.  Most recently, Nicole served as Project Commissioning Engineer for William Grant & Sons at the Tullamore Distillery in Ireland.  She's also been a fierce advocate for the distilling industry as a founding board member of the American Craft Spirits Association and co-chair of Legislative, Convention and State Guild Committees.

Aged for 15 years in American White Oak ex-bourbon barrels and then finished in Madeira wine casks from Portugal'sMadeira Island, The Tyrconnell 15 Year Old Madeira Cask Finish is a one-of-a-kind Irish whiskey with an unsurpassed richness and complexity. It is the oldest Madeira cask finished Tyrconnell released.

By 2007, The Tyrconnell distilling team was experimenting with different finishing techniques after discovering how amenable their light, soft and fruity whiskey was to a cask finish. One of the first modern Irish whiskeys aged in Madeira casks, The Tyrconnell 10 Year Old Madeira Cask Finish, was released in 2007 alongside The Tyrconnell 10 Year Old Port Cask Finish and The Tyrconnell 10 Year Old Sherry Cask Finish, all permanent expressions in the brand's portfolio.

"We knew we had discovered something special when we first began experimenting with finishing The Tyrconnell in Madeira casks," says John Cashman, Global Brand Ambassador. "Because we are in the fortunate position of being one of the oldest Irish whiskey-producing companies, we have the patience to wait 15 long years to present something truly remarkable. The Tyrconnell is made of just two ingredients – the finest Irish barley and pure Irish spring water. These two simple materials are transformed by experienced hands into an Irish whiskey like no other. Produced in traditional pot stills, The Tyrconnell is one of a rare few Irish whiskeys that utilizes double distillation, allowing more of the rich and natural flavors of The Tyrconnell to remain. This creates a whiskey that carries a delicate flavor atop a creamier, more viscous presence.

Aging the whiskey for 15 years before incorporating the Madeira cask finishing method into this unique limited edition has resulted in an even more complex expression with an incredible evergreen forest freshness. The legend of The Tyrconnell® was born in 1876, when R. M. Delamere entered his beautiful chestnut colt, Tyrconnell, in the 10th running of the prestigious National Produce Stakes Horse Race at The Curragh, considered Ireland's most important thoroughbred racecourse. A short thoroughbred with the odds stacked against him, fortune found favor that afternoon as Tyrconnell crossed the finish line in first place, besting horses and oddsmakers alike on his march to victory. 

The against-all-odds victory captured the imagination of the assembled crowd, which included the Watts, an Irish race horse loving family who had built a thriving whiskey distillery. They chose to commemorate Tyrconnell's win by creating a limited edition, small batch whiskey that bore the name of their local champion. Although the Watts family intended to make The Tyrconnell just once, it ended up becoming their most popular whiskey, even claimed to have been the best-selling Irish whiskey in America before Prohibition.

Wafer biscuit sweet vanilla aromas mingle with banana bread and deep red fruit skin. Very soft and approachable with hazelnut and dark sugar lingering under the surface.

TASTE

Initially soft but then an explosion of spice. Viscous and oily, coating the mouth with stone fruit, hints of Peach Melba and a fresh herbaceous zest.

FINISH

Astonishingly long, initially sweet with the stone fruit to the fore followed closely by burnt orange peel, drying with an almost evergreen forest freshness and a finale of spice that lingers for what seems like an eternity.

Women have played a significant role in the brand's history dating back to 1893, when John Walker & Sons purchased the Cardhu distillery from Elizabeth Cumming. Cardhu is one of the single malts that comprises Johnnie Walker Black Label and is considered the heartbeat of the blend. Elizabeth Walker, the wife of founder John Walker, was also fundamental to the creation of their own blended whisky, working alongside John and their son Alexander in the original Walker grocery shop. Long Island Spirits Releases Pine Barrens™ The First “Bottled-in-Bond” American Single Malt WhiskyLong Island Spirits, one of the country’s most innovative barley-to-bottle craft distilleries, is celebrating it eleventh anniversary by announcing the release of Pine Barrens “Bottled-in-Bond”; the first ever American Single Malt Whisky that carries the Federal Governments highly coveted designation “Bottled-in-Bond”. Long Island Spirits named by Bar Business as “American Single Malt Distillery of the Year” in 2015; is offering 300 (750ML) bottles of this rare whisky in its first release. Long Island Spirits will be offering the Pine Barrens™ “Bottled-in-Bond” series as an annual release, which will retail for about $100 with each one of these highly sought after bottles having the release year hand written on the front label.

Bottled in bond refers to American-made whisky that has been aged and bottled according to a set of legal regulations contained in the United States government's Standards of Identity for Distilled Spirits. The regulations are codified in the Bottled-in-Bond Act of 1897. In order to be labeled as "Bottled-in-Bond" or "Bonded," the whisky must be the product of one distillation season and one distiller at one distillery. It must be bottled and aged in federally bonded warehouses under the U.S. government supervision for no less than 4 years. The bottled product's label must identify the distillery by DSP number.

Pine Barrens American Single Malt Straight Whisky is named after the central Suffolk County, New York pine and wetland area, which is over 100,000 acres of Long Island. The Pine Barrens forest preserve, serves as a watershed that protects the Magothy aquifer that was formed 21,000 years ago when the glaciers receded creating one of the most pristine water sources in the United States. These pure water sources are iron free and ideally suited for producing the world’s finest whisky.

Pine Barrens Whisky gets it start as a deliciously drinkable Barley Wine Ale beer that Long Island Spirits brews and ferments for about 3 weeks; rather than using a traditional “beer wash” or “distillers beer” that other single malts are produced from. Pine Barrens Bottled-in-Bond is then double copper pot distilled prior to being carefully aged in new American Oak casks for at least 4 years. EDINBURGH, Scotland, February 19, 2018 Two pioneers of craft brewing and distilling, Innis & Gunn and Tullamore D.E.W. Irish Whiskey, have collaborated for the first time to create Kindred Spirits, a limited edition Scottish stout aged using triple distilled Irish whiskey barrels.

Using a unique barrel ageing process developed by the brewing team at Innis & Gunn, Kindred Spirits is matured using the finest triple distilled, triple blend Irish whiskey barrels from Tullamore D.E.W. to create a smooth and delicious Scottish Stout that is greater than the sum of its parts.

The result is a one of a kind craft stout - a perfect pairing of the character of Innis & Gunn's rich flavour packed beer, and the sweet, spicy, smooth taste of Tullamore D.E.W., with notes of dark chocolate and coffee alongside hints of vanilla and oak in the 6.1% ABV brew.
