NEW YORK, New York June 30, 2025-- World Whiskey Society (WWS), known for scouring the globe to create the world's most interesting whiskeys, is highlighting its 108-Proof Kentucky Straight Bourbon Whiskey Finished In Japanese Mizunara Shochu Barrels. Limited to only 2,000 bottles globally, this collectible expression, dubbed the Samurai Edition, represents one of the first known bourbon releases finished in this rare and distinctive cask style.

"We're proud of this extraordinary, virtually unrepeatable bourbon finished in Japanese Mizunara Shochu casks," says Alex Kogan, CEO of World Whiskey Society. "With only 2,000 bottles available worldwide, this expression reflects our commitment to pushing boundaries and creating rare, world-class whiskey experiences that collectors and connoisseurs won't find anywhere else."

After maturing in newly charred American oak, this bourbon is finished in rare Japanese Mizunara oak casks previously used to age Shochu, adding remarkable complexity and distinctive flavor to the final spirit. With a mash bill of 75% corn, 13% rye, and 12% malted barley, the bourbon originates from Bardstown Bourbon Company—one of the most technologically advanced distilleries in the United States.

As an exceptionally rare and collectible release, the Samurai Edition features a striking Samurai helmet topper and delivers a smooth, sweet, and sophisticated whiskey with robust, hard-hitting heat. A testament to WWS's cask finishing expertise, this unique expression stands as one of the first—and few—Mizunara Shochu cask-finished bourbons on the market.

But, yes, this is a first because in the 20,000-plus whiskies I have tasted for the bible alone, I can confirm I have never before encountered this fascinating combination," says Jim Murray, whisky writer, critic, and author of Whisky Bible 2022, who scored the bourbon a 93.5. "When I approach unique whiskies like this, it is my habit to close my eyes and formulate in my mind how I expect the nose and flavors to pan out, given what I understand about the distillation and casks."

1887

In 1887, Colonel Edmund Haynes Taylor, Jr. built a new kind of distillery destination in Millville, Kentucky. Inspired by European architecture, the site featured a Castle, a classical Springhouse, and a Sunken Garden. What he built became the birthplace of bourbon hospitality and tourism.

Prohibition forced the closing of the distillery in 1920. Over the next century, the property changed owners and occupants several times, eventually falling into ruin.

 

2012

In 2012, Will Arvin came across photographs of the abandoned distillery. He couldn’t stop thinking about its legacy and potential. He decided to visit the property to see for himself.

At the distillery, Will found caved-in roofs, boarded-up windows and doors, and vegetation so overgrown he had to use a flashlight — in the middle of the day — to navigate. But, he felt an affinity for the property. It was then that he resolved to restore the historic bourbon icon.

 

2014

In 2014, our team purchased the Old Taylor Distillery, in ruins. Then we got to work, building a consortium of like-minded people, often from outside the industry, who shared their vision. Together, we did not renovate the distillery - we restored it. 

As our team restored the distillery we pondered a name that fit with both the distillery’s history and modern ideals. After much debate and exploration, Castle & Key was a perfect fit as it highlighted both our historic distillery in the Castle and the importance of our grounds and watersource, the keyhole-shaped Springhouse.

 

2022

Over the years following, the team conquered multiple milestones – the release of the first Castle & Key clear spirits in April 2018, the Grand Opening of the distillery in September 2018, and the release of Restoration Rye, Castle & Key’s first aged spirit in December 2020.

In March 2022, Castle & Key Small Batch Kentucky Straight Bourbon Whiskey became the first bourbon distillate that has been distilled and released at the Historic Old Taylor Distillery in nearly 5 decades.

Meet Our Team

Sebastian and Erika Degens, Founders

Husband-and-wife team Sebastian and Erika Degens are the founders of Stone Barn Brandyworks. Sebastian spent much of his childhood in Germany, and developed a palate for fruit brandy in Hamburg as a teenager. Erika grew up in the countryside of upstate New York, oblivious to the delights of alcohol but already well down the rabbit hole of fruit and berry connoisseurship. Erika and Sebastian first discovered Portland on a road trip north from California, and landed here to stay on a cold November day in 1980. They quickly joined the Mycological Society and began foraging for chanterelles. This delight in Pacific Northwest abundance soon expanded into fruit, vegetables, and home canning chutneys, jams, and preserves.. These early experiences have become a lifelong appreciation for the remarkable bounty of the Pacific Northwest, and are reflected in the business they began together.

Andy Garrison, Head Distiller

Originally from Chicago, Andy Garrison has been Stone Barn’s lead distiller since 2012. His insatiable appetite for technical white papers and cooperage conference proceedings keeps the ideas flowing, especially when it comes to Stone Barn’s whiskey program. Inspired by global spirits traditions, Andy loves a good project, whether that’s malting corn on his basement floor, fermenting koji-innoculated winter squash, or smoking his own malted wheat using decommissioned barrel staves.

Jenna Boettger Boring

Jenna started working farmers markets for Stone Barn towards the end of 2021, and we expect she will be working in our tasting room as well in the months to come! Jenna was a big fan of Stone Barn long before joining the team. She loves a good whiskey or cocktail, but especially loves the way amazing drinks tend to bring people together. When she’s not nerding out over the newest rye, you can find her teaching music classes, illustrating children’s books, or eating french fries.

Ashley Todd

Ashley first intersected with Stone Barn as manager of People’s Coop weekly farmers market, the longest running year-round farmers market in the state.  The transition to staffing a booth herself went super smoothly.

Ashley moved to Portland in 2004 and has spent over a decade working in the local food system. She is a voracious reader who loves farmers markets, roller skating, baking, and of course a well-made cocktail.

nothing brings people together like whiskey

It all started in 2012.  Cleveland Seals was looking for a post-retirement project to occupy his time and had the wild idea to start a whiskey distillery.  Cleveland shared his dream with his son, Chris, and asked for his help.

Chris —a longtime economist and risk manager— knew all too well how difficult it would be to bring his Dad's dream to life.  Looking at the risks, Chris thought that the chances of success were pretty low, but he liked the idea of spending time with his dad, so he suggested to Cleveland that they do a “feasibility study.”  The supposed “study” would ostensibly determine the chances of success in starting an Austin-based whiskey distillery, but secretly, Chris’s real plan was just to spend time with his dad, get him settled into retirement, and after having a lot of fun, decide not to actually do it.

Over the course of the next year, that is exactly what Cleveland and Chris did. The two traveled together, visited whiskey distilleries, and had a lot of fun drinking whiskey together. Prior to this “study” the father-son duo rarely talked with one another, but they soon found themselves talking every day.  And not just talking about business.  After a few whiskeys they were talking about everything -- even their feelings!  As Chris says, “it was the best thing that ever happened to me and my dad.”

Then, as fate should have it, in 2013 state laws in Texas changed.  The changes made it easier to open a craft Bourbon distillery in Texas, and also made it likely that a Texas Whiskey category would emerge.  Having devoted a year to studying the market, the two realized they just might be at the right place at the right time.  They assembled a team of local farmers, whiskey experts, local artists, and crazy co-conspirators — and together with the support of their whole community, Still Austin Whiskey Co was born. 

The distillery broke ground in 2014 and began distilling in 2017 (yes, it took three years to build this special distillery).  In 2020, Still Austin's first straight bourbon whiskey was released.  Over the past decade, Cleveland and Chris discovered the power of believing in a special future - especially for someone you love.  Cleveland's dream came to life as an authentic Texas whiskey, made from grain to glass in Austin, Texas.  Together we make whiskey for everyone: the musicians, the visionaries, the lovers, the scientists, the oddballs, the artists, and the everyday dreamers.

Everybody knows that really great whiskey HAS to come from Kentucky, right?

And everybody knows bourbon HAS to come from Bourbon County, right? Right?

Everybody is wrong.

The truth is great whiskey can come from anywhere, and great bourbon can come from anywhere in the United States (as long as you follow the rules).

Dozens of fantastic whiskeys have popped up over the last few years from all over the world, even from places as far away from the U.S. as Australia. As whiskey-making has grown more popular, people from all over the world have learned how to make great

whiskey, and Texas is leading the way.

Whiskey tends to take on the flavors and characteristics of the area from which it was made. In wine making, that’s called terroir, and since we make 100% of our whiskey from Texas grown grains, grown by Texas farmers, and aged in the Texas Hill Country, you can be sure that inside every bottle of Still Austin Whiskey is a little taste of our home. (and it tastes great) But don’t just take our word for it.We work with some of the best in the business to fully leverage Texas grown grains and the erratic Central Texas weather to make the best whiskey to ever come out of the state. (and maybe a few others too)

Right from the start, we set out to create a different kind of whiskey brand. We wanted to build a brand that reflected the craftsmanship and artistry that goes into making grain-to-glass whiskey while also representing the vibrant, creative soul of the city from which is was born. Take one look at any of our whiskey labels, and that’s pretty apparent.

Each of our flagship spirit labels features original artwork hand-painted by world-renowned Austin artist, Marc Burkhardt. The Musician, The Artist, and The Naturalist are are all inspired by the archetypes of Austin which share our spirit of creativity.

But as they say, beauty is only skin deep.

We mill, mash, distill, barrel, age, and bottle every drop of our whiskey ourselves in Central Texas. This painstaking labor love begins with our grains. 100% of our grains are grown in Texas, by Texas farmers. No grain from any other state or country is ever used in our whiskeys.

Not too many other distilleries are able to make whiskey from grain to glass, and NO other distillery is as dedicated to our level painstaking perfection. As we said before, it might not be the easiest way to make whiskey, but it is the right way.  That’s how we make whiskey that’s as beautiful inside as it is out.

Beauty

Our primary grains; white corn, brasetto rye, and wildfire malted barley, are grown throughout North and West Texas, mostly from Lonestar Family Farms. Lonestar is a third generation Texas family farm, focussed on conservation, organic growing and family-oriented business practices. These farmers are setting the bar for family-owned agriculture.  While many distilleries use commodity grains like yellow dent corn or Canadian winter wheat, Still Austin’s uses only Texas-grown grains from these farms, which are often organic and always non-GMO.

When our whiskey is ready to age, we place it in our sustainably sourced white oak barrels. The barrels are toasted first, and then given a level 3 char. This helps to prime the barrel, making it easier for the whiskey to draw out more desirable flavors from the wood. Charring the barrel releases caramelized wood sugars and aldehydes that give our whiskey its signature, sweet vanilla flavor.

Once we’ve milled and mashed our grains, our state-of-the-art column still, Nancy, takes over. Nancy was custom made by world-famous still manufacturer Forsyths in Scotland to the exact specifications of our Master Distiller, Mike Delavonte. Named after the titular character in the cult-cassic sci-fi horror film, Attack of the 50 Foot Woman. Nancy is so massive, to install her at our distillery, we had to cut a hole in our roof and drop it in with a crane.

After the whiskey is barreled, we activate our secret weapon, the wild Texas weather. Anyone who’s spent time in Texas knows that our weather swings are that of legend, (our record is 56 degrees in 24 hours). As the old saying here goes, “If you don’t like our weather, wait a minute.”
Through years of trial and error, our Head Distiller, John Schrepel has learned to fully leverage these weather swings and age our whiskey to perfection. With these rapid temperature changes, our whiskey expands and contracts in our barrels at much higher rates than in other climates. It is because of these erratic climate swings, that our whiskeys are able to take on many more complex flavors and characteristics so much quicker than anywhere else.

slow water reduction

As the Texas weather works its magic, as much as 15% of the spirit in the barrel can evaporate in the first year alone. To keep our whiskey in proper balance, our distillers employ an ancient process called slow water reduction or ‘elevage.’ This deeply complex process was developed in the brandy-making regions of Cognac and Armagnac in France and brought to us by our Master Blender, Nancy Fraley, who spent years in this region learning from masters of their craft. During this process, over the course of several months, we constantly monitor and add very small amounts of water to aging barrels to help reduce the impact of smokey phenolic compounds and break down more soluble sugars from the oak.

New barrel warehouses provide major advancements in whiskey maturation, worker safety, and structural integrity

ELIZABETHTOWN, Ky., June 16, 2025 - Whiskey House of Kentucky, the most advanced custom whiskey distillery in the country, has partnered with The Koetter Group to build 12 state-of-the-art rickhouses utilizing innovative K-RAX barrel storage technology over the next six years. Constructed on Whiskey House of Kentucky's property in Elizabethtown, Kentucky, each warehouse will be seven stories high, hold 48,048 barrels, and designed to improve barrel maturation performance, enhance worker and contractor safety, reduce maintenance, and strengthen structural integrity and longevity. "As the leader in custom whiskey production, we want the most innovative and advanced rickhouses in the industry for our exclusive customers," said Whiskey House co-founder and CEO David Mandell. "The Koetter Group provides us with an incredible product that delivers significant improvements in warehouse maturation, air flow, safety, and durability."

The pioneering K-RAX warehouse design increases maturation performance and airflow by using a full-length vented cupola in conjunction with their continuous floor vents around the entire perimeter of the building. In addition to air flow, the floor vents allow alcohol vapors — which are heavier than air — to exit the building for lower vapor build up, which reduces barrel and structural damage. The K-RAX warehouse improves worker and contractor safety with its full width walk boards, wire mesh fall protection next to walkways, elimination of pinch points throughout the warehouse, and stronger dunnage that provides improved worker safety and smoother barrel rolling.

K-RAX warehouses are constructed using Southern yellow pine that is glue laminated, heat treated, and kiln dried. As a result, the material is stronger and prevents powder post beetles from damaging the wood. Moreover, the CNC machined connections create a very tight fit for very little movement. This eliminates the need for a plumb bob and enables unbalanced loading so that barrels can be loaded and unloaded from any floor or side of the building without jeopardizing its structural integrity.

Civil work for the construction of warehouses five and six began in March 2025 with Phillips Brothers Construction. K-RAX mobilized on the Whiskey House property the week of May 26 and begins construction on warehouse five on June 16.

Today's announcement further bolsters Whiskey House's transformative position in the contract whiskey manufacturing industry. Since the start of operations on July 1, 2024, Whiskey House has produced more than 97,000 barrels, 56 unique mashbills, and 59 different recipes for its exclusive custom whiskey production customers. The 110,000 square foot distillery boasts a highly sophisticated manufacturing system that is fully automated and runs on proprietary software 24 hours a day, seven days a week.
